Description

This hearty and comforting Chicken Stew is packed with tender pieces of chicken, vegetables, and a savory broth. It’s perfect for a cozy meal on a cold day and can be made in one pot!


Ingredients

  • 2 tablespoons olive oil
  • 1 lb (450g) chicken thighs or breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 potatoes, peeled and cubed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups (950 ml) chicken broth
  • 1 cup (240 ml) water
  • 1 cup (150 g) frozen peas
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  • Brown the Chicken:
    • Heat olive oil in a large pot over medium heat. Season the chicken pieces with salt and pepper. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
  • Cook the Vegetables:
    • In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Add garlic, carrots, and celery, and cook for another 3 minutes.
  • Add Potatoes and Herbs:
    • Stir in the potatoes, bay leaf, thyme, and rosemary. Return the browned chicken to the pot.
  • Simmer the Stew:
    • Pour in the chicken broth and water. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 30-35 minutes, or until the vegetables are tender and the chicken is cooked through.
  • Add Peas and Finish:
    • Stir in the frozen peas and cook for an additional 5 minutes. Discard the bay leaf. Taste and adjust seasoning if necessary.
  • Serve:
    • Garnish with fresh parsley and serve hot.

Notes

  • For a thicker stew, you can mash some of the potatoes in the pot or add 1 tablespoon of flour mixed with water during cooking.
  • You can substitute the chicken thighs with chicken breasts, but thighs tend to remain juicier.
