Ingredients

For the Chicken:

  • 1 lb boneless skinless chicken thighs (or breasts), cut into bite-sized pieces

For the Gluten-Free Teriyaki Sauce:

  • ⅓ cup gluten-free tamari (or coconut aminos)
  • 2 tbsp honey (or maple syrup)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 2 tsp cornstarch + 2 tbsp water (slurry, for thickening)

Instructions

  1. Prep Chicken → Toss chicken pieces with oil, salt, and pepper.
  2. Air Fry → Place in the air fryer basket in a single layer. Cook at 380°F (193°C) for 12–14 minutes, shaking halfway, until golden and cooked through.
  3. Make Sauce → While chicken cooks, whisk tamari, honey, rice vinegar, sesame oil, garlic, and ginger in a small pan over medium heat. Bring to a simmer. Stir in cornstarch slurry and cook until thickened (2–3 minutes).
