- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1/4 cup water
- 12 egg roll wrappers
- Oil for frying (vegetable or canola)
- Powdered sugar (for dusting)
- Optional: caramel sauce for dipping
Instructions
- Prepare the Apple Filling:
- In a medium saucepan over medium heat, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice.
- Cook, stirring occasionally, for about 5-7 minutes until the apples begin to soften.
- Mix the cornstarch with water and add it to the apples. Stir and cook for an additional 2-3 minutes until the mixture thickens.
- Remove from heat and let it cool for 10-15 minutes.
- Assemble the Egg Rolls:
- Lay an egg roll wrapper on a flat surface. Place about 2 tablespoons of the apple filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll up tightly, sealing the edges with a bit of water.
- Repeat with the remaining wrappers and filling.
- Fry the Egg Rolls:
- Heat about 1 inch of oil in a large skillet over medium heat.
- Once the oil is hot (about 350°F / 175°C), carefully fry the egg rolls in batches, turning occasionally, until golden brown and crispy (about 2-3 minutes per side).
- Remove and drain on paper towels.
- Serve:
- Dust the egg rolls with powdered sugar. Serve warm with caramel sauce for dipping, or with a scoop of vanilla ice cream for an extra treat.
Notes
- For a healthier version, you can bake the egg rolls in a 400°F oven for 12-15 minutes instead of frying them.
- You can also add a pinch of cloves or ginger for extra flavor in the filling.
