For the Salmon Meatballs:
- 1 lb fresh salmon fillet, skin removed and chopped into small pieces
- ½ cup bread crumbs (or almond flour for low-carb)
- 1 large egg
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon zest
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil (for brushing)
For the Avocado Sauce:
- 1 ripe avocado, peeled and pitted
- 1 tablespoon fresh lime juice
- 2 tablespoons Greek yogurt (or dairy-free yogurt for a dairy-free option)
- 1 small garlic clove, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1–2 tablespoons water (for desired consistency)
Instructions
1. Make the Meatballs:
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the chopped salmon, breadcrumbs, egg, parsley, dill, lemon zest, garlic, salt, and pepper.
- Mix until just combined, being careful not to overwork the mixture.
- Roll the mixture into 1-inch meatballs and place them on a lined baking sheet.
- Brush the meatballs lightly with olive oil.
2. Bake the Meatballs:
- Bake the salmon meatballs in the preheated oven for 15-18 minutes or until golden brown and cooked through (internal temperature of 145°F/63°C).
- Remove from the oven and set aside to cool slightly.
3. Make the Avocado Sauce:
- While the meatballs are baking, prepare the avocado sauce.
- In a blender or food processor, combine the avocado, lime juice, Greek yogurt, garlic, salt, and pepper.
- Blend until smooth, adding water 1 tablespoon at a time until the sauce reaches your desired consistency.
4. Serve:
- Serve the baked salmon meatballs with a generous drizzle of avocado sauce on top or on the side for dipping.
- Garnish with extra fresh parsley or dill if desired.
