Description

These Baked Salmon Meatballs are a healthy, flavorful twist on the classic meatball! Made with fresh salmon, breadcrumbs, and fresh herbs, these meatballs are baked to perfection and served with a creamy, zesty avocado sauce. The combination of tender, flaky salmon with the rich avocado sauce makes for a light yet satisfying meal that’s perfect for a weeknight dinner or a special gathering!

For the Salmon Meatballs:

  • 1 lb fresh salmon fillet, skin removed and chopped into small pieces
  • ½ cup bread crumbs (or almond flour for low-carb)
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil (for brushing)

For the Avocado Sauce:

  • 1 ripe avocado, peeled and pitted
  • 1 tablespoon fresh lime juice
  • 2 tablespoons Greek yogurt (or dairy-free yogurt for a dairy-free option)
  • 1 small garlic clove, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 tablespoons water (for desired consistency)

Instructions

1. Make the Meatballs:

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the chopped salmon, breadcrumbs, egg, parsley, dill, lemon zest, garlic, salt, and pepper.
  • Mix until just combined, being careful not to overwork the mixture.
  • Roll the mixture into 1-inch meatballs and place them on a lined baking sheet.
  • Brush the meatballs lightly with olive oil.

2. Bake the Meatballs:

  • Bake the salmon meatballs in the preheated oven for 15-18 minutes or until golden brown and cooked through (internal temperature of 145°F/63°C).
  • Remove from the oven and set aside to cool slightly.

3. Make the Avocado Sauce:

  • While the meatballs are baking, prepare the avocado sauce.
  • In a blender or food processor, combine the avocado, lime juice, Greek yogurt, garlic, salt, and pepper.
  • Blend until smooth, adding water 1 tablespoon at a time until the sauce reaches your desired consistency.

4. Serve:

  • Serve the baked salmon meatballs with a generous drizzle of avocado sauce on top or on the side for dipping.
  • Garnish with extra fresh parsley or dill if desired.
