Description

Warm caramelized bananas, a hint of rum, and a fluffy cobbler topping come together in this cozy Southern-inspired dessert.

For the Banana Filling:

4 ripe bananas, sliced

½ cup unsalted butter

¾ cup dark brown sugar

1 tsp vanilla extract

1 tsp ground cinnamon

¼ tsp ground nutmeg

2 tbsp dark rum (or substitute with juice)

For the Cobbler Topping:

1 cup self-rising flour

½ cup sugar (optional, for sweeter topping)

¾ cup milk or buttermilk

¼ tsp salt

2 tbsp melted butter (for drizzling, optional)


Instructions

Preheat Oven:

Preheat to 350°F (175°C). Grease a 9×9-inch baking dish.

 

Make Banana Filling:

In a skillet, melt butter over medium heat. Stir in brown sugar, cinnamon, nutmeg, and vanilla. Add rum and cook for 1 minute. Fold in bananas and coat them gently in the sauce.

 

Transfer to Dish:

Pour the banana mixture into the prepared dish and set aside.

 

Mix Cobbler Batter:

In a bowl, whisk flour, sugar (if using), milk, and salt until just combined. Drop spoonfuls over the banana mixture and spread gently.

 

Bake:

Bake for 35–40 minutes, or until golden brown and bubbling. Let cool 10–15 minutes before serving.

 

Serve:

Spoon into bowls and top with vanilla ice cream, whipped cream, or toasted pecans.

Notes

Add a splash of bourbon instead of rum for a deeper flavor, or try adding chocolate chips or chopped walnuts before baking for extra indulgence.
