For the Sandwich:

  • 2 boneless, skinless chicken breasts

  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 4 slices whole wheat bread (or your choice of bread)
  • 1 ripe avocado, sliced
  • 4 slices cheese (cheddar, Swiss, or mozzarella)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter (for toasting the bread)

Instructions

1. Prepare the Chicken:

  • Preheat a skillet or grill pan over medium heat.
  • Rub the chicken breasts with olive oil, and season with garlic powder, onion powder, paprika, salt, and pepper.
  • Grill or cook the chicken for 5-7 minutes per side, until it’s fully cooked through and has an internal temperature of 165°F (75°C).
  • Let the chicken rest for a few minutes before slicing it into thin strips.

2. Toast the Bread:

  • In a separate skillet, melt 1 tablespoon of butter over medium heat.
  • Place the slices of bread in the skillet and toast until golden brown on both sides, about 2-3 minutes per side.

3. Assemble the Sandwich:

  • Spread mayonnaise on one slice of each toasted bread and Dijon mustard on the other.
  • Layer the sliced chicken on one slice of bread, followed by sliced avocado and a slice of cheese.
  • Top with the second slice of bread, mustard side down.

4. Melt the Cheese:

  • Place the assembled sandwich back into the skillet. Press down lightly with a spatula and cook over medium heat for about 2-3 minutes per side, until the cheese is melted and the bread is crispy.

5. Serve:
