Ingredients
For the Chicken and Veggies:
- 2 boneless, skinless chicken breasts (or thighs), cooked and shredded

- 1 teaspoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup red cabbage, thinly sliced
- 1 avocado, sliced
For the Peanut Sauce:
- ¼ cup peanut butter (creamy or chunky)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon fresh lime juice
- 1 teaspoon ginger, freshly grated
- 1–2 tablespoons water (to thin the sauce)
For Wrapping:
- 4 large flour tortillas (or whole wheat or gluten-free wraps)
Instructions
In a skillet, heat the olive oil over medium heat. Add the shredded chicken, soy sauce, sesame oil, garlic powder, and ginger powder. Stir to coat the chicken in the spices and cook for about 2-3 minutes until heated through. Remove from heat and set aside.
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, lime juice, and grated ginger. Add water a little at a time until the sauce reaches your desired consistency (smooth and pourable).
Lay the tortillas flat on a clean surface. Divide the shredded chicken, shredded carrots, cucumber, red cabbage, and avocado slices evenly between the wraps. Drizzle with the peanut sauce.
Carefully fold in the sides of the tortilla, then roll it tightly to enclose the filling.
Slice the wraps in half and serve immediately with any leftover peanut sauce for dipping.
