For the Chicken Korma:

  • 2 lbs boneless, skinless chicken thighs, cut into chunks
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon cinnamon
  • ½ teaspoon chili powder (adjust to taste)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (14 oz) coconut milk
  • ½ cup plain Greek yogurt
  • ¼ cup almond butter or ground almonds
  • 2 tablespoons tomato paste
  • 1 tablespoon honey
  • ½ cup chicken broth

For Garnish:

  • Fresh cilantro, chopped
  • Sliced almonds (optional)

Instructions

  • Prepare the Ingredients:
    Chop the chicken, onion, garlic, and ginger.

  • Layer in the Slow Cooker:
    Add the chicken, onion, garlic, and ginger to the slow cooker.

  • Add the Spices & Sauce:
    In a bowl, mix together garam masala, cumin, coriander, turmeric, cinnamon, chili powder, salt, black pepper, coconut milk, yogurt, almond butter, tomato paste, honey, and chicken broth. Pour over the chicken.

  • Slow Cook:
    Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and the flavors meld together.

  • Finish & Serve:
    Stir well before serving. Garnish with fresh cilantro and sliced almonds. Serve over rice or with warm naan.

Notes

  • For extra richness, stir in ½ cup heavy cream or additional yogurt at the end.
  • Adjust the spice level by adding more chili powder or a chopped green chili.
