Description
A simple, savory slice packed with zucchini, cheese, and all-around comfort.
Ingredients
2–3 medium zucchinis, grated and drained
5 large eggs
1 small onion, finely chopped
1 cup grated cheddar cheese
¼ cup olive oil
1 cup self-raising flour
Salt & pepper to taste
Optional: chopped parsley, crumbled feta, diced bacon
Instructions
Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
Grate zucchini and squeeze out excess water using a towel.
In a bowl, whisk eggs, cheese, oil, and onion. Stir in zucchini.
Add flour, salt, and pepper. Mix until combined.
Pour into dish and bake for 35–40 minutes until golden and set.
Cool slightly, slice, and serve warm or cold.
