For the Chicken:
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

For the Sandwiches:
- 1 tablespoon olive oil
- 1 medium yellow onion, thinly sliced
- 1 medium bell pepper, thinly sliced (green, red, or a mix)
- 4 hoagie rolls or sandwich buns
- 4 slices provolone cheese (or mozzarella/cheddar)
- 1 tablespoon mayonnaise (optional for spreading on rolls)
Instructions
1. Season and Cook the Chicken:
- Season the thinly sliced chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken slices to the skillet and cook for 5-7 minutes, or until fully cooked and lightly browned. Remove from heat and set aside.
2. Cook the Vegetables:
- In the same skillet, heat 1 tablespoon olive oil over medium heat.
- Add the sliced onion and bell pepper and cook for 5-7 minutes, or until they are softened and slightly caramelized. Remove from heat.
3. Assemble the Sandwiches:
- Preheat the oven to 375°F (190°C).
- Cut the hoagie rolls lengthwise, but don’t slice all the way through—leave them hinged.
- Optional: Spread a thin layer of mayonnaise on the inside of the rolls for added creaminess.
- Layer the cooked chicken, followed by the sautéed onions and bell peppers on the bottom half of each roll.
4. Melt the Cheese:
- Place a slice of provolone cheese over the chicken and veggies.
- Place the sandwiches in the oven for 3-5 minutes, or until the cheese is melted and the rolls are slightly toasted.
