Description
A rich, moist, double-chocolate loaf packed with fresh zucchini and melty chocolate chips.
Ingredients
1 1/2 cups grated zucchini (about 1 medium)
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large eggs
1/2 cup vegetable oil
1/2 cup granulated sugar
1/4 cup brown sugar
1 tsp vanilla extract
3/4 cup chocolate chips (plus extra for topping)
Instructions
Preheat oven to 350°F and prepare a loaf pan.
Grate zucchini and squeeze out moisture.
Mix dry ingredients in a large bowl.
Whisk eggs, oil, sugars, and vanilla in another bowl.
Stir in dry mix, zucchini, and chocolate chips until just combined.
Pour into loaf pan, top with more chips, and bake 50–60 minutes.
Cool completely before slicing.
