For the Streusel Topping:
- 1/4 cup all-purpose flour
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- 2 tbsp unsalted butter, melted
Instructions
- Preheat oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Add the dry ingredients to the wet ingredients, alternating with the sour cream, and mix until just combined.
- For the streusel topping, mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly.
- Drop cookie dough onto the baking sheet in rounded tablespoons. Sprinkle each cookie with the streusel topping.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on a wire rack.
