  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup chopped toasted coconut (for garnish, optional)

Instructions

  1. Preheat Oven & Prep Pan:

    • Preheat oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish.
  2. Make the Cake Batter:

    • In a large mixing bowl, whisk together flour, sugar, baking soda, and salt.
    • Add eggs, crushed pineapple (with juice), and vanilla extract. Stir until combined.
    • Fold in nuts and shredded coconut, if using.
  3. Bake the Cake:

    • Pour batter into the greased baking dish and spread evenly.
    • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
