For the Chicken:

  • 2 boneless, skinless chicken breasts, sliced in half lengthwise
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

For the Sauce & Pasta:

  • 8 oz pasta (penne, fettuccine, or rigatoni)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ cup fresh basil, chopped (for garnish)

Instructions

1. Cook the Pasta:

  • Cook pasta according to the package instructions. Drain and set aside.

2. Cook the Chicken:

  • Season the chicken breasts with garlic powder, paprika, salt, and black pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Sear the chicken for 4-5 minutes per side until golden brown and fully cooked (internal temperature of 165°F). Remove and set aside.

3. Make the Sauce:

  • In the same skillet, melt butter and sauté the garlic for 30 seconds until fragrant.
  • Add the sun-dried tomatoes and cook for 1 minute.
  • Pour in the chicken broth and heavy cream, stirring to combine.
  • Add parmesan cheese, Italian seasoning, red pepper flakes, salt, and black pepper. Stir and let the sauce simmer for 3-4 minutes until thickened.

4. Combine Everything:

  • Slice the cooked chicken into strips and return it to the pan.
  • Add the drained pasta and toss everything together until well coated in the sauce.

5. Serve:

  • Garnish with fresh basil and extra parmesan cheese.
  • Serve immediately and enjoy!
