For the Muffins:

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract

For the Topping (Optional):

  • ¼ cup chopped pecans or pumpkin seeds

Instructions

  • Preheat Oven & Prep Muffin Tin:
    Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.

  • Prepare the Cream Cheese Filling:
    In a small bowl, mix cream cheese, sugar, and vanilla extract until smooth. Set aside.

  • Make the Muffin Batter:
    In a large bowl, whisk together flour, sugar, brown sugar, baking soda, salt, pumpkin pie spice, and cinnamon.
    In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.

  • Combine Wet & Dry Ingredients:
    Gradually mix the wet ingredients into the dry ingredients until just combined (do not overmix).

  • Fill Muffin Cups:
    Fill each muffin cup about ⅔ full with the pumpkin batter.
    Spoon about 1 teaspoon of the cream cheese mixture into the center of each muffin.

  • Add Toppings (Optional):
    Sprinkle chopped pecans or pumpkin seeds on top for extra crunch.

  • Bake:
    Bake for 18-22 minutes, or until a toothpick inserted in the muffin (not the cream cheese) comes out clean.

  • Cool & Serve:
    Let muffins cool in the pan for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temperature!
