Ingredients
Scale
3 medium zucchinis, sliced
2 tbsp olive oil
3 garlic cloves, minced
½ tsp salt
¼ tsp black pepper
1 tsp Italian seasoning
⅓ cup freshly grated Parmesan cheese
Optional: chopped parsley for garnish
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Slice zucchini into ½-inch rounds.
Toss with olive oil, garlic, salt, pepper, and Italian seasoning.
Arrange in a single layer on the baking sheet.
Sprinkle with Parmesan.
Roast for 15–20 minutes, flipping halfway.
Garnish and serve warm.
