For the Ginger Soy Glaze:

  • ¼ cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds (for garnish)
  • 2 tablespoons green onions, chopped (for garnish)

Instructions

1. Prepare the Cod:

  • Preheat the oven to 375°F (190°C).
  • Place the cod fillets on a baking sheet lined with parchment paper.
  • Drizzle with olive oil, and season with salt and black pepper.

2. Make the Ginger Soy Glaze:

  • In a small saucepan, whisk together the soy sauce, honey, rice vinegar, ginger, and garlic.
  • Bring to a simmer over medium heat, stirring occasionally.
  • Let it simmer for about 3-4 minutes until the sauce thickens slightly. Remove from heat.

3. Bake the Cod:

  • Bake the seasoned cod fillets in the preheated oven for about 12-15 minutes, or until the fish easily flakes with a fork.
  • During the last 3 minutes of baking, brush the cod fillets with a generous amount of the ginger soy glaze.

4. Serve:

  • Drizzle the remaining glaze over the cod fillets.
  • Garnish with sesame seeds and chopped green onions.
  • Serve with steamed rice, roasted vegetables, or a fresh salad.
