- For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter (melted)
- 1/4 cup chopped pecans (optional)
- For the Cream Cheese Layer:
- 8 oz cream cheese (softened)
- 1 cup powdered sugar
- 1 cup whipped topping (Cool Whip or homemade)
- For the Lemon Pudding Layer:
- 2 packages (3.4 oz each) instant lemon pudding mix
- 3 cups cold milk
- For the Whipped Topping:
- 2 cups whipped topping (Cool Whip or homemade)
Instructions
- Make the Crust:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine the melted butter, flour, and chopped pecans (if using). Mix until well combined.
- Press the mixture into the bottom of a 9×13 inch baking dish.
- Bake for 15-20 minutes, or until golden brown. Let cool completely.
- Make the Cream Cheese Layer:
- In a separate bowl, beat the softened cream cheese and powdered sugar until smooth.
- Fold in 1 cup of whipped topping. Spread the cream cheese mixture evenly over the cooled crust.
- Make the Lemon Pudding Layer:
- In another bowl, whisk together the instant lemon pudding mix and cold milk until thickened, about 3-5 minutes.
- Spread the pudding evenly over the cream cheese layer.
- Top with Whipped Topping:
- Spread the remaining 2 cups of whipped topping over the pudding layer.
- Chill & Serve:
- Cover the dessert and refrigerate for at least 2 hours before serving.
- Garnish with lemon zest or slices if desired.
Notes
- You can substitute the pecans in the crust with walnuts, or omit the nuts entirely for a simpler crust.
- For a more intense lemon flavor, use fresh lemon juice and zest in the pudding layer.
