Description

Lemon Lush is a refreshing, layered dessert with a buttery crust, sweet cream cheese, zesty lemon pudding, and whipped topping. It’s the perfect balance of tart and sweet for any occasion.

 


Ingredients

  • For the Crust:
    • 1 cup all-purpose flour
    • 1/2 cup unsalted butter (melted)
    • 1/4 cup chopped pecans (optional)
  • For the Cream Cheese Layer:
    • 8 oz cream cheese (softened)
    • 1 cup powdered sugar
    • 1 cup whipped topping (Cool Whip or homemade)
  • For the Lemon Pudding Layer:
    • 2 packages (3.4 oz each) instant lemon pudding mix
    • 3 cups cold milk
  • For the Whipped Topping:
    • 2 cups whipped topping (Cool Whip or homemade)

Instructions

  • Make the Crust:
    • Preheat the oven to 350°F (175°C).
    • In a medium bowl, combine the melted butter, flour, and chopped pecans (if using). Mix until well combined.
    • Press the mixture into the bottom of a 9×13 inch baking dish.
    • Bake for 15-20 minutes, or until golden brown. Let cool completely.
  • Make the Cream Cheese Layer:
    • In a separate bowl, beat the softened cream cheese and powdered sugar until smooth.
    • Fold in 1 cup of whipped topping. Spread the cream cheese mixture evenly over the cooled crust.
  • Make the Lemon Pudding Layer:
    • In another bowl, whisk together the instant lemon pudding mix and cold milk until thickened, about 3-5 minutes.
    • Spread the pudding evenly over the cream cheese layer.
  • Top with Whipped Topping:
    • Spread the remaining 2 cups of whipped topping over the pudding layer.
  • Chill & Serve:
    • Cover the dessert and refrigerate for at least 2 hours before serving.
    • Garnish with lemon zest or slices if desired.

Notes

  • You can substitute the pecans in the crust with walnuts, or omit the nuts entirely for a simpler crust.
  • For a more intense lemon flavor, use fresh lemon juice and zest in the pudding layer.
