1/2 cup pumpkin purée
4 oz cream cheese, softened
2 tbsp maple syrup
1 tsp pumpkin pie spice
2 eggs
1/4 cup milk
1/4 cup granulated sugar
1 tsp cinnamon
2 tbsp butter (for frying)
Instructions
Mix pumpkin purée, cream cheese, syrup, and spice until smooth.
Trim and flatten bread slices. Spread filling and roll tightly.
Whisk eggs and milk. Dip each roll-up.
Cook in buttered skillet, turning until golden.
Roll warm roll-ups in cinnamon sugar. Serve immediately.
