Ingredients

1 lb carrots, peeled & halved
2 tbsp olive oil (plus more for ricotta)
Salt & pepper
1 cup whole milk ricotta
1 tsp lemon zest + 1 tsp lemon juice
2 tbsp hot honey
Optional: fresh thyme or mint for garnish
Instructions
Preheat oven to 425°F. Toss carrots with olive oil, salt & pepper. Roast for 25–30 minutes.
Blend ricotta with olive oil, lemon zest, and salt until whipped.
Spread ricotta on a plate. Top with roasted carrots.
Drizzle with hot honey. Garnish with herbs and serve.
