Ingredients

2 medium sweet potatoes
2 tbsp olive oil
Salt & pepper, to taste
½ cup crumbled feta cheese
2 tbsp honey (warmed slightly)
Optional: fresh thyme or parsley for garnish
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Slice sweet potatoes into ¼–½ inch rounds.
Toss with olive oil, salt, and pepper.
Arrange on baking sheet and roast 20–25 minutes, flipping halfway.
Sprinkle with feta and drizzle with warm honey.
Garnish and serve warm.
