Let your slow cooker do the work and come home to melt-in-your-mouth beef bites drenched in
garlicky butter, served alongside tender, flavorful potatoes.
Ingredients
– 2 lbs beef stew meat or chuck roast, cubed
– 1.5 lbs baby potatoes, halved if large
– 6 cloves garlic, minced
– 1/2 cup unsalted butter
– 1/2 cup beef broth
– 1 tsp Italian seasoning
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions
1. (Optional) Sear beef in a skillet for 2-3 minutes per side for deeper flavor.
2. Place beef and potatoes in the slow cooker. Season with Italian seasoning, salt, and pepper.
3. In a saucepan, melt butter and sauté garlic for 1-2 minutes. Pour over contents in the slow
cooker.
4. Add beef broth. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
5. Stir gently, garnish with parsley, and serve warm.
