Ingredients
Scale
For the Pancakes:
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 large egg
- 1 cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
For the Bacon:
- 8 slices thick-cut bacon
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika (for a smoky flavor)
- ½ teaspoon black pepper
For the Honey Butter Drizzle:
- ¼ cup unsalted butter, melted
- 3 tablespoons honey
- 1 teaspoon cinnamon (optional, for extra flavor)
Instructions
Cook the Bacon:
- Preheat your oven to 375°F (190°C).
- Arrange the bacon slices on a baking sheet lined with parchment paper.
- Drizzle the maple syrup over the bacon and sprinkle with smoked paprika and black pepper.
- Bake for 15-20 minutes, or until crispy and caramelized. Once done, set aside to cool slightly and cut into smaller pieces to fit your sliders.
Make the Pancakes:
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix—it’s okay if the batter is a little lumpy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Pour about 2-3 tablespoons of batter onto the griddle for each pancake, cooking until bubbles form on the surface (about 2 minutes), then flip and cook the other side for another 1-2 minutes, until golden brown. Repeat until all the pancakes are cooked.
Prepare the Honey Butter Drizzle:
- In a small bowl, mix together the melted butter, honey, and cinnamon (if using). Stir until smooth.
Assemble the Sliders:
- Take one small pancake and layer with a few pieces of crispy maple bacon.
- Top with another pancake to form a slider.
- Drizzle the warm honey butter over the top of each slider.
- Serve immediately and enjoy!
Notes
- For a lighter option, you can use turkey bacon or substitute with plant-based bacon.
- Serve with fresh fruit on the side to balance the sweetness and richness!
- You can make the honey butter drizzle ahead of time and reheat before serving.
