For the Pancakes:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For the Bacon:

  • 8 slices thick-cut bacon
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika (for a smoky flavor)
  • ½ teaspoon black pepper

For the Honey Butter Drizzle:

  • ¼ cup unsalted butter, melted
  • 3 tablespoons honey

Instructions

Cook the Bacon:

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the bacon slices on a baking sheet lined with parchment paper.
  3. Drizzle the maple syrup over the bacon and sprinkle with smoked paprika and black pepper.
  4. Bake for 15-20 minutes, or until crispy and caramelized. Once done, set aside to cool slightly and cut into smaller pieces to fit your sliders.

Make the Pancakes:

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix—it’s okay if the batter is a little lumpy.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  5. Pour about 2-3 tablespoons of batter onto the griddle for each pancake, cooking until bubbles form on the surface (about 2 minutes), then flip and cook the other side for another 1-2 minutes, until golden brown. Repeat until all the pancakes are cooked.
