Strawberry Earthquake Cake

  • 1 box of strawberry cake mix
  • 1 cup shredded coconut
  • 1 cup chopped strawberries (fresh or frozen)
  • 1/2 cup white chocolate chips
  • 1/2 cup cream cheese (softened)
  • 1/2 cup butter (melted)
  • 2 cups powdered sugar
  • 3 large eggs
  • 1 cup water

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • Spread the shredded coconut evenly across the bottom of the prepared dish.
  • Sprinkle chopped strawberries and white chocolate chips on top of the coconut layer.
  • Prepare the strawberry cake mix according to the package instructions (using water, eggs, and oil). Pour the batter over the strawberry layer.
  • In a medium bowl, mix the softened cream cheese, melted butter, and powdered sugar until smooth.
  • Drop spoonfuls of the cream cheese mixture over the cake batter.
  • Bake for 40-45 minutes, or until the cake is set and a toothpick comes out mostly clean (a little gooey is fine).
  • Let cool before serving.
