- 1 box of strawberry cake mix
- 1 cup shredded coconut
- 1 cup chopped strawberries (fresh or frozen)
- 1/2 cup white chocolate chips
- 1/2 cup cream cheese (softened)
- 1/2 cup butter (melted)
- 2 cups powdered sugar
- 3 large eggs
- 1 cup water
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Spread the shredded coconut evenly across the bottom of the prepared dish.
- Sprinkle chopped strawberries and white chocolate chips on top of the coconut layer.
- Prepare the strawberry cake mix according to the package instructions (using water, eggs, and oil). Pour the batter over the strawberry layer.
- In a medium bowl, mix the softened cream cheese, melted butter, and powdered sugar until smooth.
- Drop spoonfuls of the cream cheese mixture over the cake batter.
- Bake for 40-45 minutes, or until the cake is set and a toothpick comes out mostly clean (a little gooey is fine).
- Let cool before serving.
