For the Chicken & Noodles:
- 8 oz noodles (lo mein, ramen, or rice noodles)
- 1 lb chicken breast, thinly sliced
- 1 tablespoon sesame oil (or vegetable oil)
- 2 cups vegetables (bell peppers, carrots, snap peas, or broccoli)
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 green onions, chopped (for garnish)
- 1 teaspoon sesame seeds (for garnish)
For the Teriyaki Sauce:
- ¼ cup low-sodium soy sauce
- 2 tablespoons honey (or brown sugar)
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sriracha (optional, for heat)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Instructions
1. Cook the Noodles:
- Cook the noodles according to the package instructions. Drain and set aside.
2. Make the Teriyaki Sauce:
- In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and sriracha.
- In a separate bowl, mix cornstarch with water to make a slurry, then add it to the sauce. Stir well and set aside.
3. Cook the Chicken:
- Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat.
- Add the chicken and cook for 4-5 minutes, until browned and fully cooked. Remove from the pan and set aside.
4. Stir-Fry the Vegetables:
- In the same pan, add a little more oil if needed.
- Add garlic, ginger, and vegetables, and stir-fry for 2-3 minutes until slightly tender but still crisp.
5. Combine Everything:
- Return the cooked chicken to the pan.
- Pour in the teriyaki sauce and stir to coat. Let it simmer for 1-2 minutes until thickened.
- Add the cooked noodles, tossing everything together until well combined.
6. Serve:
- Garnish with green onions and sesame seeds.
- Serve immediately and enjoy!

- Add pineapple chunks for a sweet touch.
