Description

These Chicken Teriyaki Noodles are a flavorful, quick, and easy meal made with tender chicken, stir-fried vegetables, and a delicious homemade teriyaki sauce. Served over chewy noodles, this dish is perfect for a weeknight dinner and is better than takeout!

For the Chicken & Noodles:

  • 8 oz noodles (lo mein, ramen, or rice noodles)
  • 1 lb chicken breast, thinly sliced
  • 1 tablespoon sesame oil (or vegetable oil)
  • 2 cups vegetables (bell peppers, carrots, snap peas, or broccoli)
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

For the Teriyaki Sauce:

  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey (or brown sugar)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional, for heat)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

1. Cook the Noodles:

  • Cook the noodles according to the package instructions. Drain and set aside.

2. Make the Teriyaki Sauce:

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and sriracha.
  • In a separate bowl, mix cornstarch with water to make a slurry, then add it to the sauce. Stir well and set aside.

3. Cook the Chicken:

  • Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat.
  • Add the chicken and cook for 4-5 minutes, until browned and fully cooked. Remove from the pan and set aside.

4. Stir-Fry the Vegetables:

  • In the same pan, add a little more oil if needed.
  • Add garlic, ginger, and vegetables, and stir-fry for 2-3 minutes until slightly tender but still crisp.

5. Combine Everything:

  • Return the cooked chicken to the pan.
  • Pour in the teriyaki sauce and stir to coat. Let it simmer for 1-2 minutes until thickened.
  • Add the cooked noodles, tossing everything together until well combined.

6. Serve:

  • Garnish with green onions and sesame seeds.
  • Serve immediately and enjoy!

  • Swap chicken for shrimp, beef, or tofu for variety.
  • Add pineapple chunks for a sweet touch.
