Ingredients
1¾ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tbsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp ground ginger
¾ cup brown sugar, packed
1 cup canned pumpkin purée
2 large eggs
½ cup vegetable oil
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
In a large bowl, whisk together pumpkin, brown sugar, eggs, oil, and vanilla.
In another bowl, mix flour, baking soda, baking powder, salt, and spices.
Fold dry ingredients into wet until just combined.
Pour batter into loaf pan and smooth the top.
Bake for 55–65 minutes, or until a toothpick comes out clean.
Cool in pan for 15 min, then transfer to a wire rack.
