One-Pan Honey BBQ Chicken Rice

Description

Sticky, savory, and sweet with only one pan to wash—this easy weeknight dinner is a keeper!


Ingredients

Scale

1 lb boneless skinless chicken thighs or breasts, chopped

1 cup long grain white rice

2 cups chicken broth

1 cup honey BBQ sauce (divided)

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced

1 tbsp olive oil

Salt & pepper to taste

Optional: green onions or parsley for garnish


Instructions

Heat oil in a large pan. Sear chicken on both sides until golden. Remove and set aside.

 

Sauté onion and garlic in same pan for 2–3 minutes.

 

Stir in rice, broth, bell pepper, and half of the BBQ sauce.

 

Return chicken to pan. Cover and simmer on low for 20–25 minutes, until rice is tender.

 

Brush chicken with remaining BBQ sauce. Broil for 3–5 minutes for a sticky glaze.

 

 

Garnish and serve warm.
